Saturated fats are the healthiest fats. Fats/Oil like canola, peanut, corn, soy can become rancid over time because of oxidation for heat, light, and oxygen, and when you consume oils that are rancid they can cause inflammation, intestinal disorders, metabolic disorders, and degenerative disorders. Fortunately oils that are "saturated" have a better chance of remaining stable and not becoming rancid. They have a better chance because of the saturation or hydrogen molecules. Your safest and healthiest oils to consume are butter, lard, tallow, coconut oil, and olive oil. I bet all of you think I'm crazy. But it's the truth and fact. Now eating too much butter and lard will most definitely cause problems later on down the line if you don't have a balanced diet because of the increased cholesterol intake. Coconut oil, however, lowers bad cholesterol because of the good cholesterol that essentially "scrubs" your arteries. Rancid oils...no bueno.
